Celery seed complements tomatoes well, making it a popular ingredient in Bloody Marys, sauces, and homemade ketchup. The whole form is ideal for marinades, brine, and pickling spice blends while the powdered variety works better in dishes that should be smooth. It should be noted however, that ground celery seed can have a more bitter taste than its whole counterpart.

Uses:
Organic celery seed is a spice made from the seeds of wild celery, which grows in marshy conditions and has a stronger flavor than the common celery found in stores. Having a brown color and a herbal taste, the seeds are small, brown, and crunchy, just like the celery you put in mirepoix or stack next to chicken wings with blue cheese dip.
You’ll find celery seed in everything from potato salad and seafood dishes to stews, barbecue sauces, and vinaigrettes.
Aside from imparting flavor, celery seed is also free of the fibrous chunks that many find objectionable. Celery stalks, on the other hand, retain their stringy properties while cooking, which can detract from delicate dishes like soups.
History:
Celery seed belongs to the parsley family, originally reaching from China to Sweden. Today, whole or grounded celery seed is imported mostly from France and India in the form of smallage–a plant commonly used as a medicinal aid for centuries before becoming a popular edible item in the seventeenth century. Despite their similar tastes, vegetable celery (stalks and leaves) that we recognize today comes from other varieties of its species and is cultivated in the United States.
