History: Linguine is a pasta dish that originates from the Liguria region of Italy. The name linguine means “little tongues” in Italian, which is a reference to the shape of the pasta. Linguine is typically made with a long, thin noodle that is slightly flattened. It can be served with a variety of sauces, but it is most commonly served with a pesto sauce. Linguine has its origins in the Genoa region of Italy, which is located in the northwest part of the country. The first recorded recipe for linguine was in the cookbook Libro per Cuoco by Bartolomeo Scappi, which was published in 1570. This recipe called for flour, water and salt to be mixed together and then rolled out into thin sheets. The sheets were then cut into strips that were about two fingers wide. Once the strips were cut, they were boiled in water and then served with a sauce made from garlic, olive oil and parsley. While linguine is most commonly associated with Italy, it is also popular in other parts of the world. In America, linguine became popular during the early 20th century as Italian immigrants began to settle in large cities like New York and Boston.
